This dressing combines walnut oil, apple cider vinegar, stone-ground mustard, and maple syrup making for a sweet, slightly tart, and nutty accompaniment to a variety of salads. This dressing pairs great with spinach salads that feature fruit or nuts. Try it atop this spinach salad with chicken, fruit, and goat cheese.

INGREDIENTS
1/4 cup walnut oil
1/4 cup maple syrup
1/4 cup apple cider vinegar
2 1/2 tbsp mustard
1 tbsp soy sauce
1/2 tsp salt
1/2 tsp pepper
PREPARATION
1. Wisk together oil, syrup, vinegar, mustard, soy sauce, salt, and pepper in a small bowl. Store left-overs in fridge.
