Caprese Salad

This simple salad is a staple for summer, especially if you have a garden. Fresh-plucked tomatoes cannot compare to store-bought, and the same goes for basil. The sweet juice from ruby-red tomatoes is complemented by generous chunks of mozzarella, fresh basil leaves, olive oil and a dash of balsamic vinegar for bite.

 

Broccoli Bacon Salad

A perfect side dish for summer BBQs, this healthier broccoli bacon salad combines slightly steamed broccoli with smokey bacon, crunchy water chestnuts, dried cranberries, and a creamy low-fat mayo dressing.

 

 

Spinach salad with chicken, fruit, and goat cheese

This salad combines fresh baby spinach, tender chicken, crisp apples, smooth avocados, juicy blueberries, and creamy goat cheese – the perfect cool-down on a hot summer day. Leave out the chicken for a light but satisfying vegetarian lunch or side dish for your favorite summer meat. Add grilled or roasted chicken to make it a hearty dinner salad; serve with a slice of rosemary or sourdough bread.
